The Ora d’Aria restaurant in Florence owes its name to its proximity to the former prison Le Murate, but also to the intent that all the staff aims to achieve, namely to offer their guests a relaxing and pleasant break, a moment in which to detach from the hectic flow of daily life while taking their usual one-hour lunch break. The environment is minimalist and elegant, with details expressing a delicate and discreet luxury.
Marco Stabile from Tuscany was born in 1973 and is the Ora d’Aria’s starred chef, boasting a long experience in Italian cuisine, including the opening of L’Osteria di Passignano belonging to the Antinori family, the long stay at Arnolfo’s and Il cavaliere del Castello di Gabbiano of the Beringer Blass winery.
At the end of this avenue, which led him to refine his techniques and cultivate his talent, Stabile arrived at the Ora d’Aria, where he finally had a chance to express his personality at best thanks to his curious, cosmopolitan and innovative spirit. Mixing culture, family and land, Stabile plays up childhood flavours with a modern twist.
