The chef is Giuseppe Mancino, originally from Campania, who after so many important experiences in Italy and abroad has stopped here to express his creative cuisine. You can choose between several menus. The tasting menus are 5: the sea menu, the land menu, the vegetarian menu and two of the Chef’s choice made by 10 or 5 courses. The tasting menu “Il Mare” includes: the mullet, the scallops, the calamarata, the ravioli, the dentex, and the pear. The “La Terra” tasting menu includes: crispy egg, smoked Tuscan sushi, Carnaroli rice, stuffed Agnolotti, pigeon, peanut and mango cheese. In the “Vegetarian” tasting menu: gazpacho terrine, crunchy egg, turnip top tortelli, durum wheat spaghetti, artichoke, cheese such as sweet vanilla, whipped ganache, Breton sablè, saffron sauce and gel lemon. The tasting menu “In my own way … past and present” is a 10-course plus a surprise course in which the Chef guides his guests, driving them into a tasting experience. Even the tasting menu “The essentials” is freely interpreted by the Chef choosing among his dishes, but includes only 4 courses (Entrée, Antipasto, First course, Pre-dessert and Dessert).
Finally, lose yourself in the variation of the “tarte au citron”, with almond sablé, lemon cream, mint meringue and basil ice cream. The cellar is full of interesting choices, with small Tuscan productions at advantageous prices.
