The restaurant’s menu celebrates the local culinary tradition and offers unusual combinations inspired by an idea of “pleasure in wellness”, enhancing the high-quality raw materials, fresh ingredients locally grown and organic products.

Seasonal vegetables are carefully selected, as well as pasta, cheese, meat, and fish.
The menu includes also game, white and red meat, which are smoked using the olive bark of Terme di Saturnia.  The seafood – codfish and gilthead bream – comes from the Argentario coast; cheeses are selected from the best local products – the “Guttus della Parrina” and the famous “Ricotta di Manciano”, which is also the main ingredient for several desserts.  The olive oil comes from the olive trees of Terme di Saturnia, inside the property.  The wine list enhances the territoriality of local grapes: cherry, cabernet – sauvignon and chardonnay and above all the great DOC of the Maremma, first of all Morellino di Scansano.
